2. Pear Mousse

Ingredients

  • Pear Puree 500 g
  • Gelatin 8 pieces
  • Egg White 125 g
  • Sugar 150 g
  • Cream 500 g

Method

  • Bring pear puree to a boil, 5 minutes
  • Add gelatin
  • Whip egg whites and sugar
  • Pour the egg mixture into the pear puree mixture and whip all together, 5 minutes
  • Whip the cream until stiff peaks hold and pour into the above. Then whip all together, 5 minutes.
  • Pour into a mold and refrigerate overnight

3. Yuzu Jelly

Ingredients

  • Yuzu Puree 380 g
  • Sugar 80 g
  • Gelatin 16 pieces

Method
