1. Almond Biscuit for Opera

Ingredients

  • Egg 20 pcs
  • Sugar 750 g
  • Almond Power 750 g
  • Bread Flour 250 g
  • Egg Whites 650 g
  • Sugar 200 g

Method

  • Whip eggs, sugar 750 g, almond powder and bread flour, 7 minutes.
  • Whip egg whites and sugar 200 g.
  • Whip all together and bake at 200 °C.

 2. Chocolate Ganache

Ingredients

  • Dark Chocolate 58% 1,000 g
  • Cream 1,000 g
  • Sugar 50 g

Method

  • Boil cream and sugar.
  • Pour into dark chocolate and mix it.

3. Butter Cream

Ingredients

  • Egg Whites 300 g
  • Sugar 2,000 g
  • Water 1,000 g
  • Salt 50 g
  • Soft Butter 4,200 g

Method

  • Whip egg whites.
  • Boil water with sugar and salt to 120 °C.
  • Pour water into egg whites.
  • Cold down and add soft butter, then whip until smooth.
